Super Mario Odyssey, I loved the ending but the post-game power moon collecting has me discouraged. Too hard to find them all, there's so many! 
The last game that I beat was Diablo 3. I really wanna go through it again from the very beginning and play it again.

Detroit: Become Human. It's built to replay so, when it's less fresh in mind, I plan to do that. On my first playthrough I kept everyone safe and took the pacifist route, but next time I'm going out guns blazing.
I just beat Divinity: Original Sin 2 a few days ago (not the definitive edition). ...I should really go back and complete the first one.

I think the last game I finished was Undertale. I don't often finish the games I start because I'm not a very skilled gamer. Although I did play through Monster Prom a few times after beating Undertale if that counts. I haven't gotten every ending by any means.
I recently rebeat all of the Halo games and currently trying to beat KH3
Xenoblade Chronicles 2. Currently on my second playthrough trying to get the Blades I'm missing and whatever extras I might have skipped as well.

Oooh, the last one I beat was Devil May Cry 5! Took me 12 hours (with the only times I stopped being for food and bathroom breaks) and I slept like a baby afterwards. Waited for 11 years for that game to release, so half a day to finish it was an easy tradeoff. 
Lego HP years 1-4 (Beat countless times) but the nintendo ds version of it (not the 3ds either)
