I don't think I can make the crispy ones at home. Mmm those are so nice though. I used to get them all the time at a place in Taiwan with hot and sour soup

ooh for crispy you can just fry them after boiling, or you can do the thing where you start on the pan and add water but i think that takes more practice to get it right
