By using "the quick brown fox etc" as a legend/key of sorts? Each letter corresponds to a totally different letter. The braille helps you figure out which letter is actually which.

Then we get the whole alphabet from the image, since the sentence has the whole alphabet.
we see that it doesn't match the alphabet they showed.
We use that first alphabet for that image (the brown one)
The result is gibberish, so we have to change for the alphabet from the fox/dog image
