@Amber Lynne: The potato was baked most of the way through before it was removed from the oven. The rustic potato was cut cut in half lengthwise before both sections had their contents emptied into a bowl. Add butter, cream, salt, pepper, garlic, onion powder, and grated cheese before mashing it all until smooth. Add the mashed potato back into their skins, adding cheese on top before placing back into the oven. After it finishes, place chives and sour cream, or ranch dressing on top and enjoy. It will have the softness of mashed potatoes, the crisp of the potato skin, and a nice top crisp in part thanks to the cheese on top.
