It's a trick. He might be hungry, but he's not as hungry as he's acting (unless he's been out and about all night or is still on medication). He just knows certain behaviors get him certain things, which reinforces it.

@Avocado: oh no it's not a trick. he hasn't eaten in 24 hours haha
I'm trying to get him on a feeding schedule so I fed him at 1am last night (he didn't eat much since he's used to free feeding) and then at 10:30 am this morning (again didn't eat much)

@Avocado: yeah I'm holding out for 11:30 haha
I want to feed him at midnight I guess because I tend to sleep at about 1:30 (the video said to feed 1.5 hours before you want to sleep)
but he just kept playing last night so it pushed to 1 am

Once he gets the idea of a schedule, he'll be fine, I'm sure. Most cats I know are active as hell either at night, or during morning and evening. It's a natural circadian rhythm.
