do you have to be on the same server in order to dm someone?
I think you have to share a server or have them on your friends list/ know their username+#code to send them a direct message.
I've barely DMed people on Discord before, and I think we were always in a server together, so I'm not sure
I use discord for writing chat/looking for beta readers. That basically it lmao.

I have a million channels. Some are twitch communities that I enjoy chatting with, others are wow specific for the guilds I'm in. We use it to dungeon/raid/ and just chat. We also play hide and seek with one of them xD which is always a ton of fun. We sit in voice chat and just spend a few hours playing hide and seek in game and laughing.
Some are art discord servers and some are forum based. Like voltra and the Sims forums .
I also have group dms that are specifically for gaming with a group of people for recorded gaming sessions so I can share the game to them and we can have our videos up while we chat and play.

Twitch communities- I just found them from the streamers. They usually have the link on their about page
Kpop groups- I either found them on Google, found them from a Kpop forum, or such
Voltra- From Voltra
Korean learning- From the Korean learning subreddit
Animal Crossing- From a subreddit or a forum? Actually, I'm also part of a Discord for an Animal Crossing forum as well

how do u check streams n stuff, is it just like when ur in the mood to chat you'll jump into a convo, or ?
Some I mostly just use for updates, news, and such, like the Animal Crossing one. The other ones I also use for updates, but I'll also poke around and join in convos from time to time

The friends are usually close friends and we message each other.
Servers don't really matter much to me.
I'm only in 2 that are art related but i rarely talk and post in servers all together.
