My real-life friends that I am close to are still in Oregon. ^__^; I have only a few mutuals here in the Netherlands.

I can now boil water at VERY low flame point which is nice vs needing to crank heat to medium before it would 'simmer'.
It's will also help long-term for us to get some pans that I can bake in (square ones for lasagna/shepherds pie/etc).
The problem is, we don't have an oven, only a convection oven+microwave combo and a small fridge with a freezer on top.
When I say small, I mean like, dorm-room size mini-fridge, maybe a little taller, to my hip about (5'6/169cm).
We have a deep freezer downstairs, but, someday, I'd love to have a full kitchen, just, homes here are expensive. D:
We've been offered almost 255k for our place and it's a small condo/townhouse/apartment-like complex.
(My husband paid 100k for this place and so we like, own our place, but, live amongst others if that makes sense)?

Well, I guess visiting is pretty much out of the question for you, and unless you've been there for several years, I'm sure you're still having a bit of culture shock between Portland and the Netherlands, especially with a pandemic thrown in to the middle of it. Moving far away can be difficult and it can take time to really make friends in the new place and feel truly comfortable - even in the best of times.

Random Question ------------------------------> What’s The Strangest Thing In Your Refrigerator?
I don't know that anything in my fridge is particularly strange but some of the options might include kimchi, sauerkraut, fish sauce, chicken bone broth, and, at the moment, three bags of spinach... Is any of that weird??

I moved here on December 28th, 2019, and was approved for 5-year residency starting mid-February 2020 and a little while later? Mark Rutte (Prime Minister) told us all we are going into lockdown, people from the USA and other countries need to go back home unless they've got the virus, people who were married and on residence permits were permitted to stay.
It's silly because I asked my husband after accidentally (long story) leaving my passport back in my parents' home (about a 6-hour drive away) and having to come all the way back to their home from Seattle if I should even come out there and he said, "I mean, you could wait, but, I rather you be home." - Thank GOODNESS I did come out here when I did, because if I held off? I may have only just recently been allowed to fly out here.
I wasn't living in Portland, I lived in a small town, but, I loved visiting Portland once in a while with my best friend, so, I miss him tons and going to VegFest (a Vegan event that has lectures from doctors or chefs or both along with a food hall to try all the new products that aren't yet on the shelves, it's how I met Caldwell Esselstyn and his daughter Jane Esselstyn a year prior to that).
I will say though while living in Oregon still with my parents would've been good for me to still see my therapist? I would've still had to fight for them to take me grocery shopping (I don't drive, forgot if I mentioned this yet to you) and take me to therapy (which, sometimes would take me pushing them) which I definitely need. - Since then? I've finally got a chance to see a Psychiatrist in person on the 8th about getting ADHD meds and hope they found something I can take that I am not allergic to (ex: Ritalin or Adderall).
I mean more than anything? It taught me how to make use of our deep freezer downstairs for frozen veggies which I trust here more than the ones in the states as often those usually contain added salt and even sometimes butter (but, why?! I get if you're making a pre-made meal, but, why?! Hah). It also has taught me how to downscale what I like having in the house. Do I need 20+ different condiments? No. I like sriracha, sauces/dressings/dips I make, maple syrup, tamari, and mustard cold. Meanwhile, balsamic vinegar, rice wine vinegar, and apple cider vinegar (is it obvious I like vinegar?) can stay on the counter. ^__^
It's been a huge culture shock and awakening for me as well moving out here, but, it's definitely helped me be exposed to real-life vs what I was raised in and it's nice to see how much more respect (although blunt) people are here. Good example? I wasn't used to trains yet (my first time riding on one was when I came here on December 10th, 2018 till March 9th, 2019). During my last week being here, I visited Amsterdam for the first time (flew in during the night) and wound up tripping on the train platform (was uneven then).

Both stood beside me along with the assistant until they got some security, they asked if I could stand and I shook my head, I was scared I shattered my knee caps from how hard I fell. I was sobbing from how much pain I was in. They then called for backup, the two women who helped me had to catch their trains but said, "Well, be safe! Hope to see you on your feet soon and have a safe flight on way home!" The two security blocked where I was so they could tell people to go around and a nurse from in station came to see me and told me they could give me medicine, thing is, I am allergic to lactose, and almost ALL the medicine they offered? Had it. They asked if I wanted to be x-rayed in the case and I nodded.
So, now, we had the station nurse near me to ensure I was stable and not pass out from the pain, two security people having people walk around me or go another way as I was blocking most of the walkway (embarrassing), one officer at bottom of the escalator that came up near us and one near the elevator (I can only presume one officer on bottom of elevator too to tell ambulance where I was. Eventually, we got my knees scanned, were just two contusions on both knees and along my shins. The medicine they could give me? was 400mg Ibuprofen. xD; But, my in-laws (future in-laws then) paid for me to get crutches and my travel insurance covered my hospital visit.
The fact I can fall on a platform here, get x-rayed, on crutches, stay in hospital for what felt like forever (was most likely 3 hours), be given medicine, be seen by doctors in that hospital, and have an ambulance ride for all under €2,000? Blew my mind, thankfully? I had travel health insurance and from that day forward? My husband just knew how clumsy I am. - In America? I know that my short 5 minute trip in an ambulance after a gallbladder attack to the hospital cost $2,500 which insurance (thankfully) covered.

Probably because my mother literally clean the entire fridge and thrown a lot of stuff away. Something tells me this won't last long, call me pessimistic xD

@Vegan: wow - that's quite a story! Thanks for sharing, though! Yes, the often subtle differences between cultures can be shocking and you don't even realize it until you get out of the US. Coming back to the US after being in Europe is an even bigger shock, imo... but it's easier to re-acclimate - once you get used to the noise!!

And it was an early morning, so I'm tired... But, I don't think I'm cooking dinner tonight - there's too many leftover bits in the fridge, plus a soup that I had to defrost/cook to make room for stuff in the freezer XD
