I think filsd's method involves the shrink/grow method, followed by some color ramp cleanup, but I have yet to receive confirmation. I really should just download some of their files and check for myself, but I don't really want their exact style, little chunky for my tastes. I know for a fact they use freestyle to line, though.

You'll be happy to note that Blender's had a massive update. The most relevant is the ability to convert any material into a color node, that you can then fiddle around with via color ramp--per material, not just compositor!

In the 3D community, they generally refer to this kind of method NPR (non-photorealistic rendering) if you want to look into it yourself. Blender 3D is free!

I haven't even tried animation, yet.

No worries, Jolly! Yes, I like to combine media to get new techniques. Color ramps, angle maps, masks, and dither textures are my go-to! It's just been over a year since I've done pixels; there was an update on the program I like to use that makes all of this totally painless to employ.

I use them to limit the palette! It's easier to keep the shading the same shades of gray for light/midtones/dark, and then go back over per area with a color ramp (the program I like to use has a 'constant' setting, which means no gradient transitions) or just smack it down to get the idea of where to put the shadows in the first place before cleanup and beautifying.

What if I use a 3D object that I made, and applied a pixel angle map (that I also made)? It doesn't do things like cast shadows or light bleed, so it always need additional shading. It's good to get a quick idea on the screen. And where do you stand on color ramps?

What exactly qualifies as a tileset? I know in general, an image that blends seamlessly with itself within an array, but are there any additional caveats when concerning pixel art? Also, so long as the end result fits within the style, is it in keeping with the intention of this thread if it's not done in a more traditional way?
